Borrow a deck, the spectator now shuffles the cards and cuts them anywhere. One pack is selected for the magician and one for the spectator. You both shuffle your cards. Put the deck back together and now the spectator deals done in a random game of elimination. The magician will always know what the last card in the deck is!
